SPAM Monte Cristo Sandwich
• Ingredients
1 (12-ounce) can SPAM Classic
6 slices Muenster cheese, cut in half
12 slices bread (white or wheat)
2 large eggs
1/4 cup milk
3 tablespoons butter
Cut SPAM into 12 slices and cook until golden brown. Layer cheese and SPAM on 6 slices of bread; cover with remaining slices of bread. In bowl, mix eggs and milk; quickly dip both sides of sandwiches into egg mixture. On griddle or skillet, sauté sandwiches in butter over medium heat until cheese is melted and both sides are browned.
Impossibly Easy Mini Chicken Pot Pies
• Ingredients
For chicken mixture
1 tablespoon vegetable oil
1 pound boneless skinless chicken breast, cut into bite-size pieces
1 medium onion, chopped (1/2 cup)
1/2 cup chicken broth
1 cup frozen peas and carrots
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground thyme
1 cup shredded Cheddar cheese (4 ounces)
For baking mixture
1/2 cup Original Bisquick mix
1/2 cup milk
2 eggs
Preheat oven to 375 degrees. Spray 12 regular-size muffin cups with cooking spray. In 10-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 5 to 7 minutes, stirring occasionally, until chicken is no longer pink in center. Add onion and chicken broth; heat to simmering. Add frozen vegetables and seasonings. Heat until hot, stirring occasionally until almost all liquid is absorbed. Cool 5 minutes; stir in cheese. In medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon 1 scant tablespoon baking mixture into each muffin cup. Top with about 1/4 cup chicken mixture. Spoon 1 tablespoon baking mixture onto chicken mixture in each muffin cup. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. With thin knife, loosen sides of pies from pan; remove from pan and place top sides up on cooling rack. Cool 10 minutes longer, and serve.
Beginner’s (Top-Choice) White Bread
Makes: 2 loaves
• Ingredients
5 1/2 to 6 cups all-purpose flour
3 tablespoons sugar
2 envelopes Fleischmann’s RapidRise Yeast
2 teaspoons salt
1 1/2 cups water
1/2 cup milk
2 tablespoons butter OR margarine
Combine 2 cups flour, sugar, undissolved yeast and salt in a large mixer bowl. Heat water, milk and butter until very warm (120 to 130 degrees); stir into flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Stir in 1 cup flour; beat at high speed for 2 minutes, scraping bowl occasionally. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes. Divide dough in half. Roll each half to 12-inch-by-7-inch rectangle. Beginning at short end of each rectangle, roll up tightly as for jelly roll. Pinch seams and ends to seal. Place, seam sides down, in greased 8 1/2-inch-by-4 1/2-inch loaf pans. Cover; let rise in warm, draft free place until doubled in size, about 45 minutes. Bake at 400 degrees for 25 to 30 minutes or until done. Remove from pans; cool on wire rack.
SPAMASHED Potato Pierogi Casserole
Makes: 12 servings
• Ingredients
2 (24-ounce) tubs Hormel Country Crock Homestyle mashed potatoes
2 cups shredded Cheddar cheese
1 cup sour cream
1 (12-ounce) can SPAM Classic, diced and sautéed
1 small onion, diced and divided
1/3 cup melted butter, divided
9 lasagna noodles, cooked and cooled
Preheat oven to 350 degrees. Grease a 9-inch-by-13-inch baking pan. Heat potatoes according to package directions. Spoon hot potatoes into large bowl. Add cheese, sour cream, 3/4 of SPAM and onion; mix well. Spread 2 tablespoons butter into bottom of dish. Place 3 lasagna sheets in single layer over butter. Spoon a third of potato mixture over noodles. Repeat layers twice. Pour remaining butter over the potatoes. Sprinkle with reserved SPAM. Cover with aluminum foil. Bake 30 to 40 minutes or until hot. Let stand 10 minutes before slicing.

SPAM Thai Style Meatballs
Makes: About 18 meatballs
• Ingredients
1/2 cup uncooked short-grain white rice (glutinous or sticky rice)
3/4 cup coconut milk
1/4 cup water
2 tablespoons green curry paste
1 (12-ounce) can SPAM Less Sodium, grated
2 tablespoons chopped fresh cilantro
1 cup flaked sweetened coconut
1 cup panko breadcrumbs
2 egg whites, beaten
Sweet chili sauce, for dipping
Rinse rice under running water in metal sieve until water runs clear. In small saucepan, combine coconut milk, water and curry paste. Add rice and bring to a boil. Immediately reduce heat to low. Cook rice on lowest setting for 20 minutes or until cooked. Preheat oven to 375 degrees. In large skillet, cook Spam on medium-high heat for 5 minutes or until SPAM is browned. Remove from heat. Stir in rice and cilantro; let cool. In shallow dish, combine coconut and breadcrumbs. Form 1 tablespoon mixture into meatballs. Dip in beaten egg white then in coconut mixture. Place on parchment paper-lined baking sheet. Bake 8 to 10 minutes or until golden brown, turning occasionally. Or deep-fry meatballs in hot oil until golden-brown; drain on paper towel. Serve with sweet chili sauce for dipping.
