New sandwich shop a hit in downtown Waynesburg
WAYNESBURG – A new sandwich shop in Waynesburg was a big hit on its first day of business.
Carlisle’s, at 78 W. High St., opened Monday morning and was busy all day.
“We had college students waiting outside the door for us to open at 6 a.m.,” the owner, Caitlin Carlisle, said Monday. “We had to replenish all of our stuff a couple times today. We’ve even had some repeat customers who stopped in this morning and came back for lunch.”
Caitlin and her husband Ken live in Rogersville and recently bought the Pioneer Grocery Store from Ken’s retired parents Gene and Judy Rush.
“We do more or less the same hoagies there and we love it out there,” Ken said Tuesday. “Obviously, you have to like working with people and we also saw a need in town that we wanted to fill.”
Caitlin said they’ve been wanting to open up a sandwich and coffee shop in Waynesburg for a while. They decided to give it a try and they now rent the space on West High Street.
“We definitely made the right choice because from college kids to business people, we’ve heard nothing but, ‘We’ve really needed something like this here,'” Caitlin said.
The shop, open from 6 a.m. to 8 p.m. Monday through Thursday, has deli sandwiches, coffee, soup and a salad bar. Caitlin said on Fridays they will be open longer than their regular hours, with live music from 6 p.m. to 9 p.m.
She said the first day was “beyond” her expectations with plenty of positive feedback from the community.
“We never even envisioned that so many people would be supportive of this,” she said.
Ken agreed and said that he thanked the community on the restaurant’s Facebook page.
“It’s the people that make Greene County what it is and you couldn’t ask for a better place to have a business,” he said.
