Neighborhood Favorite: Brick & Mortar
Ingredients:
4 large wedges of fresh pumpkin
2-4 one-pound bags of frozen corn (or fresh off the cob)
4 large potatoes, diced
2 cups carrots, diced
2 cups onion, diced
1 cup celery, diced
1/4 cup minced garlic
1/4 cup fresh jalapeños, chopped
1/4 cup brown sugar
1 tablespoon salt
1 tablespoon pepper
2 teaspoons All Spice
6 quarts chicken stock
1/2 cup honey
15-ounce can pumpkin puree
Directions:
1. Mix all veggies together and set aside.
2. Mix together brown sugar, salt, pepper and All Spice and set aside.
3. In a large stock pot, sautee the prepped vegetables. Add in the dry ingredients and stir together.
4. Pour chicken stock, honey and pumpkin puree into pot, bring to a boil and let simmer 30 minutes.
